Moist Banana Nut Bread

Good old-fashioned moist banana nut bread. Some food historians believe it became popular during the Great Depression when thrifty housewives did not want to throw out the expensive overripe fruit. It's still an American staple today eaten in many households and it's a great anytime snack that can be eaten as breakfast, a snack, or a dessert.

Ingredients:
1 cup Bob's Red Mill Wheat Flour
½ teaspoon salt
1 teaspoon baking soda
1 stick butter
½ cup white sugar
½ cup dark brown sugar
2 overripe bananas
½ teaspoon cinnamon
½ teaspoon vanilla
2 eggs
½ cup chopped walnuts (save some for topping if you prefer)

Directions:
Preheat oven to 350. Mix together the flour, salt, and baking soda in a larger bowl. In a smaller bowl, mix together the butter, sugars, bananas, cinnamon, vanilla, and eggs with a mixer. Dump the wet mix into the dry mix and blend together. Stir in the walnuts by hand and pour the mix into a greased and floured bread pan. Sprinkle some walnuts on top.  Bake for 45 minutes and check with toothpick. Enjoy!
