These are like Thanksgiving pockets of chicken goodness. Trader Joe's sells some great stuffed chicken breasts but for $13-$18 for two it can get pretty pricey. We made our own home version, and these are the bomb! Same great taste and more for our money. Pick your favorite stuffing mix and just add some diced Granny Smith apple pieces and Craisins. The sweetness of the apples and Craisins steps up any chicken game and the stuffing keeps it nice and moist. Spray it with some coconut oil just to keep it moist all over, and it adds a little flavor too. You can serve this with sweet potatoes, mashed potatoes, Couscous, Quinoa, etc.

Ingredients:
2 chicken breasts
stuffing mix (enough for two but make a little extra for topping)
2 celery sticks diced
½ small onion diced
dab of butter
chicken broth
½ large Granny Smith apple peeled & diced
handful of Craisins
Sprinkle of Bell's Turkey Seasoning Mix
Coconut oil spray
Directions:
Preheat oven to 350. Melt some butter and add the onions and celery and cook them down until they are soft. Add in the broth, stuffing mix, and seasoning mix. Add in apples and Craisins last.
Split the chicken breast and stuff each one. Save some reserve stuffing for the tops. Spray each one with oil and put into the oven for about 45 minutes. Enjoy!
